I now own about 10 gluten free cookbooks, and have made recipes from all of them. What I like best about this cookbook:1) the hints she gives for shortcuts, modifications, substitutions, and advice about ingredients to use/not use - not only helpful but invaluable to me as I expand my gluten free repertoire2) she tackles a fairly broad variety of recipes, from breads and baked goods to assorted appetizers, salads & sides, soups, gravies, and entrees3) the resource pages in the back are helpful as I am discovering more and more gluten free foods I never knew existed; many of these are only available online but at least I know they're out there!4) the section with all her flour blends is priceless--I learned a lot reading about her different blendsAbout the only disappointment for me is I wish every recipe had a photo to go with it, but I'm sure that would have made for a much more expensive book. The center section of photos is beautiful and inspiring.Buy this book and amaze your family and friends!
I am very new to this but one thing I've seen too often are gluten-free books with salads (duh!), chili or stew or other recipes that anyone could figure out. But Beth tackles the roughies ... Brioche, condensed mushroom soup, matzo AND -- wait for it -- cheese puffs gougere! It's like she read my palette. Good basics like flour blends, relplacements. I would have given it 5 stars if it included nutritional analysis but there are plenty of recipe calculators online. I really feel Beth wanted to give her readers the full benefit of all she's learned ... And we're the lucky beneficiaries!!LOVE IT!!
What a blessing for me to find Beth Hillson's Gluten-free Makeovers! First let me just say, I love cookbooks! But this gluten-free thing really had me stumped. However, this cookbook not only gave me several flour blends for different kinds of baking(cookies, breads, etc.) but also told me why. I'm a great one for wanting to know the reason something works as it does! Now, using Brth's chart, I can make a flour blend perfect for whatever I plan to bake! And as someone has already stated in a previous review, the recipes Beth has included are many and varied. Yes, she included some salads, but recipes with tantalizing names such as Grilled Scallion Bread, Quinoa Sesame "Wonder"Bread, Socca, and one my husband will be ecstatic over, Doughnuts, Best Ever Doughnuts! And I am anxious to try the Dream Crust (Flaky Piecrust). Thank you again, Beth!
This is the best book I have found in showing me how to substitute ingredients.I can not eat wheat, oats, corn, all legumes or any nuts. This book has really given me the education I need to teach myself how to increase skills at buying and preparing meals without any of those items I am allergic too. The author states she too has celiac disease, and had to put these recipes together for herself before most knew of this debilitating disease, over 30 years ago.If people only knew that most of their SYMPTOMS would go away, and the names of their disorders would no longer be relevant, if they just took WHEAT out of their diet. But that is for them to realize. Meanwhile, this book makes it possible to eat wholesomely without fear of a diminished nutrition balance in our diet. A Great book. Thanks Beth Hillson!
Been paleo for about a year, but most paleo baking recipes were pretty awful. Decided to try some gluten free recipes, and this book explains how to combine flours for great outcome. The foccaccia bread recipe is great with homemade soups and stews!
Really great recipes in this book! I love the fish tacos and raspberry crumble. So far everything we've made from here has turned out really well and have been easy to follow as well. This is a great book for all the day-to-day simple recipes you want to swap out when you are GF. I originally borrowed this from my local library, then had to buy a copy!
I bought this because my gluten-free niece was coming to visit because it looked like we could have more choices for old standards. But upon closer examination it realized that the book is based on your preparing and having on hand various flour substitute mixes to make things. This is not useful for me, as I would only be making things from it while she was visiting but it was perfect for her. She can make up the mixtures and have them on hand for easy use. GREAT info in front of book re what the various wheat less flours and thickeners do. Again, more use to the every day gluten free than to me. So, I gave the book to my niece who was delighted to have it.
This is one of my go-to books when I need variety. Beth has given regular recipes like lasagna a gluten free makeover. The meals are pretty easy to prepare, and there aren't a lot of complicated ingredients. I use this book a lot, my family has been pretty impressed with the final results. I would add this one to your collection.
